one of Cleopatra's prized beauty secrets ...pickle pickle pickle !!! is what my mind and heart yelled. Yup, a life full of ups and downs. Yaa I know it's for all of us.
Writing about pickle will be fun. I came across a lot of interesting facts.
Pickling is a method to preserve the freshly produced. The tradition of pickling started in Greece, Asia and Egypt since 3000 B.C(fact). They also make an appearance in the Bible and Shakespeare writings.
HOW ARE PICKLE MADE?
Known to be the earliest and most ancient mobile food. Pickles filled the stomach of hungry sailors and travellers and were a good source of food during chilly winters.
"salt", "oil", "sugar" are known to be the most important ingredients of a pickle. Pickle is made by immersing raw vegetables or fruit in an acidic solution or a saltwater brine until it is no longer raw or vulnerable to spoilage.

More than giving a tangy flavour and adding crunch to our food pickles come up with several other health benefits. Few to mention :

SOME QUICK AND EASY PICKLE RECIPES
It just takes 10 minutes to pickle and goes best with tacos, avocado toast, grilled chicken and more.
Pickling this root vegetable completely changes its flavour. Raddish haters can also go for it. When pickled the radish lose their bitter bite and is taking on the perfect sweet, salty, sour pickled flavour.
PREPARATION

- 5-6 radishes
- 1/2 cup apple cider vinegar
- 1 tbsp sugar
- 2 tbsp salt
- warm water
INSTRUCTION
- slice the radish as thin you can
- stuff them in a jar or a bowl
- combine vinegar, salt, sugar and warm water. stir to dissolve
- pour the mixture onto sliced radishes
- let it set for an hour
Cover and store them in the fridge for up to three weeks.
BEETROOT PICKLE
Best known to combat constipation, boost endurance and to fight cancer. Pickled beets are rich in natural sugar, copper, folate, and manganese. I have really started liking beetroot.
- 4 beetroots
- 3/4 cup water
- 2 cups white vinegar
- 3/4 cup sugar
- 1/2 tbsp peppercorns
- 1 bay leaf
- 2 whole cloves
- 1/2 tbsp mustard seeds
- 1/2 cinnamon sticks
- 1/4 tbsp salt
INSTRUCTIONS
- Peel and slice the beetroot as per your convenience
- Simmer the cut vegetable with peppercorns, bay leaf, cloves, mustard seeds and cinnamon sticks
- Strain the water and keep the rest in a jar
- Mix the vinegar, sugar, and salt. Stir to dissolve.
- Pour the mixture of vinegar onto the jar
- Seal and store in a cool place
MIXED VEGETABLE PICKLE
Bring your garden into a jar. What better than a pickle? without a delay, let's start being colourful and put some magic in a jar to store it for the rainy days.
PREPARATION
- vegetables of your choice (carrots, cauliflower, chillies, ginger, mango, lemon, etc)
- 1/4 tbsp turmeric powder
- 1/2 tbsp fenugreek powder
- 2 tbsp red chilli powder
- 1 tbsp mustard powder
- 2 tbsp oil
- 1 tbsp vinegar
- 1 tbsp mustard seeds
- a few curry leaves
- 2 dry red chillies
- 2 tbsp salt
INSTRUCTION
- Chopped vegetables ready. Pat it dry. Set aside.
- For seasoning: Heat oil in pan.crackle the mustard seed. add broken red chilly, and curry leaves. Mix well. Turn off the heat. Keep aside.
- Take the vegetables in a bowl. Add all the dry spices, salt, vinegar and lemon juice. Add seasoning.
- Give a good mix. DO NOT MIX WITH HANDS.
- Let the pickle soften for 3 days and then store in the refrigerator.
This is the best time to prepare some healthy pickles and store it for the rainy season.

Every good thing has a bad thing too. As it contains more salt, so people with hypertension should have in a measured quantity. Always said OVERDO IS BAD.
